Pasta con espárragos en 25 minutos!

Hola a todos!

De verdad ya me he hecho el propósito firme de continuar con este blog porque la verdad la cocina es mi guilty pleasure hahaha, aunque acabe rodando por la vida. 

Pues como creo que les conté hace poco estoy ya trabajando a tiempo completo, por lo que meterme a la cocina en realidad es un reto! La mayoría de las veces regresando del trabajo lo que menos quiero es ponerme a cocinar, excepto hoy, hoy llegué con hambre y se me antojaba pasta.

Así que me di a la rápida tarea de hacerme de cenar justo eso: pasta con espárragos. Aquí les va la receta, espero les guste.

Que necesitan? 
•Un manojo de espárragos
•Un paquete de pasta de tu preferencia.
•Aceite de oliva 
•Una lata pequeña de champiñones (onsinli prefieren pueden ser naturales)
•100 gr de crema.
•69 ml de caldo de pollo.

1.Primero pondremos una olla mediana con agua a hervir. Además le agregaremos unas gotas de aceite, suficiente sal y un trocito de cebolla. Dejamos que empiece a hervir.
2. Mientras vamos a cortar los espárragos en 2 o 3 trozos, que queden lo suficientemente pequeños. Acuérdense primero remover la parte blanca del tallo del espárrago. 
3. En una sartén vamos a poner aceite a calentar un poco de aceite de oliva. Y cuando el aceite este caliente vamos a sofreír los espárragos durante 3 minutos.
Después agregaremos los champiñones y el caldo de pollo. Dejamos al fuego durante unos minutos, moviéndolo un poco.
4. Cuando el agua que dejamos, ya este hirviendo, agregamos la pasta y la dejamos hasta que este al dente.
5. Ahora agregaremos la crema a la mezcla de espárragos, y revolvemos lentamente hasta q espese un poco. En caso de quererlo mas espeso puedes agregarle un poquito de maicena. No olvides también salpimentar la mezcla al gusto.
6. Finalmente vas a revolver la mezcla de espárragos con la pasta al dente ya escurrida, y ya estas lista para servir. Puedes espolvorear con un poco de queso parmesano.

Crepas rellenas de espinaca y champiñones // Spinach and mushroom stuffed crepes

Hola!!

Como han estado? Yo la verdad un poco alejada de aquí porque ha estado mi cuñada aquí visitándonos y no he tenido tanto tiempo de sentarme a escribirles, ahorita se salió a cenar y estoy aprovechando para ponerme al día.

Les cuento que el otro día le hice unas deliciosas crepas para comer y parece que le gustaron bastante, así que hoy les comparto esta receta que además te sirve perfecto si evitas comer todo tipo de carnes, pues además de funcionar perfecto como plato fuerte, puede también ser una excelente entrada o acompañante. Bueno ahí les va

Que necesitas?

Para las crepas:

  • 250 grs. de harina.
  • 4 huevos.
  • 100 grs. de mantequilla. (derretida)
  • 500 ml. de leche.
  • Una pizca de sal

Para el relleno:

  • 1 taza de champiñones previamente lavados y picados.
  • 1 manojo de espinacas lavadas y picadas.
  • 1 taza de elote desgranado o puede ser una taza de verduras congeladas de tu preferencia.
  • 1/4 de cebolla blanca picada.
Para la salsa:
  • 2 tomates grandes.
  • 1 diente de ajo.
  • 1/4 de taza de crema.
  • Aceite de oliva.
  • 1/4 de cebolla blanca.
  • 1/4 de cucharadita de sal.
  • 1 pizca de bicarbonato de sodio.
  1. Primero vamos a preparar la masa para las crepas, y esto lo logramos combinando en la licuadora todos los ingredientes necesarios (harina, huevos, mantequilla, leche y sal) y licuando hasta lograr una consistencia manejable (no demasiado fluida, pero tampoco tan espesa como para hotcakes). Coloca la mezcla en un tazón y refrigera durante 20 minutos.
  2. Mientras esperamos vamos a preparar el relleno. en un sartén grande vamos a calentar un poco de aceite de oliva y accionamos la cebolla hasta que se ponga transparente. 
  3. Agregamos las verduras y continuamos moviendo durante 5 minutos aproximadamente. Después agregamos los champiñones y las espinacas y sazonamos con sal. Dejamos en el fuego unos 5 minutos más. Retiramos del fuego y reservamos.
  4. Sacamos la masa para crepas del refrigerador. Y calentamos un sartén mediano que tenga buen teflón con un poquitito de mantequilla.  Tomamos 1/4 de taza de la mezcla y la vertemos en el sartén rápidamente y movemos el sartén de lado a lado para lograr que la mezcla cubra toda la base del sartén de manera uniforme. 
  5. Dejamos la mezcla aproximadamente 45 segundos en el fuego o hasta que las orillas de la misma se desprendan solitas. En ese momento podemos voltearla con ayuda de una cuchara o con la mano. Dejamos en el fuego durante 25 segundos más antes de retirar del fuego y dejar que se enfríe sobre un plato o superficie plana. Continuamos con el resto de la mezcla hasta que se acabe. Deberían salir entre 7 y 10 crepas dependiendo del tamaño de la sartén que ocupes.
  6. Para preparar la salsa vamos a colocar en la licuadora el tomate, el ajo, la cebolla y licuamos (si hiciera falta agregar un chorrito de agua para lograr que se licúe mejor). 
  7. Cuando esté lista la mezcla la colocamos en un sartén con un chorizo de aceite de oliva y acitronamos. Agrega también el bicarbonato y la sal y mezcla, dejándolo cocer durante 1 minuto más antes de agregar la crema y mezclar una vez mas. Retiramos del fuego la salsa y reservamos. 
  8. Para armar nuestro platillo coloca en una cuarta parte de la crepa un poco de la mezcla de verduras y dóblala de manera que quede un triángulo (por la mitad y después nuevamente por la mitad). Báñala con la salsa que todavía debe de estar caliente y puedes decorar con un poco de queso gratinado y una ramita de perejil chino. 
Si usas este platillo como plato fuerte puedes acompañar con una ensalada de lechuga. Y si te sobran crepas sin rellenar recuerda que también puedes usarlas para el postre calentándolas y untándoles un poco de Nutella o cajeta antes de servir.

How've you been? I've honestly been a bit away from here because my sister in law is here visiting I haven't had much time to sit and write, but right now she went out to have some dinner and I'm taking the opportunity to catch up.

Let me tell you, the other day I made her some delicious crepes for lunch and it seems that she liked a lot, so today I share this recipe with you, which is not only perfect as a main course if you're tying to avoid eating any kind of meat, but it also works perfect as an appetizer or side. Well here it goes...

What do you need?

For the crepes:
  • 250 grs. flour.
  • 4 eggs.
  • 100 grs. butter. (Melted)
  • 500 ml. of milk.
  • A pinch of salt
For the filling:
  • 1 cup mushrooms previously washed and chopped.
  • 1 bunch of washed and chopped spinach.
  • 1 cup shelled corn or it may be a cup of vegetables of your choice.
  • 1/4 white onion.
For the sauce:
  • 2 large tomatoes.
  • 1 clove of garlic.
  • 1/4 cup cream.
  • Olive oil.
  • 1/4 white onion.
  • 1/4 teaspoon salt.
  • 1 pinch of baking soda.
  1. First we will prepare the crepes combining in blender all the ingredients (flour, eggs, butter, milk and salt) and blending until a fluid consistency (not too thin, but not so thick). Pour the mixture into a bowl and refrigerate for 20 minutes.
  2. While we wait let's prepare the filling. In a large skillet, heat a little olive oil and sauté the onion until it becomes transparent.
  3. Add the corn or vegetables you chose and continue moving for about 5 minutes. Then add the mushrooms and spinach and season with salt. Leave in the heat for 5 minutes stirring occasionally. Remove from heat and reserve.
  4. We take the crepes' mix from the refrigerator. In a medium pan, that has good teflon, heat a little bit of butter. Take 1/4 cup of the mixture and pour into the pan quickly and move the pan from side to side to make the mixture coats evenly the entire base of the pan.
  5. Let the mixture heat for about 45 seconds or until edges start to peel. At this point we can turn it with a spoon or by hand. Leave in the heat for 25 extra seconds before removing from heat and let cool on a plate or flat surface. Continue with remaining mixture until it's all gone. It should make between 7 and 10 crepes depending on the size of the pan you use.
  6. To prepare the sauce we will place in the blender tomato, garlic and onion and mix (if necessary add a splash of water to make it blend better).
  7. When ready, pour the mix in a heated pan with olive oil and let it sauté. Add the baking soda and salt and mix, letting it cook for 1 minute before adding the cream and mix once again. Remove from heat and reserve sauce.
  8. To assemble our dish, place on a quarter of the crepe a little of the vegetable mixture and fold into a triangle (fold in half and then in half again). Pour the sauce (that should be still hot) on the top of the crepes and you can decorate with a little grated cheese and a sprig of Chinese parsley.
If you use this dish as a main course you can serve with lettuce salad. And if you can spare unfilled crepes, remember you can also use them for dessert, heating them and spreading them with a little Nutella or caramel before serving.

Pollo horneado con salsa de cilantro / Cilantro Chicken Bake

Como prometido, hoy les dejo la receta del Pollo horneado al cilantro. 
Primero que nada necesitan: 4 pechugas de pollo. 1/2 manojo de cilantro, 1 taza de leche descremada, 1 cucharada de caldo de pollo en polvo, 1 cucharada de mantequilla, 1 cucharada de harina de trigo, 1 tomate, queso mozarella rallado, aceite de oliva, sal y pimienta al gusto.
Precalienta el horno a 180º C.
Para hacer la salsa de cilantro licua el cilantro, la leche, el caldo de pollo en polvo y una pizca de sal hasta lograr una salsa homogenea. Después derrite la mantequilla en un sartén a fuego medio. Una vez derretida agrega la harina, moviendo constantemente con un batidor de globo hasta que tenga un ligero color dorado. Vierte el licuado de cilantro sin dejar de mover hasta que hierva, apaga y mueve constantemente hasta que hayas logrado una consistencia espesa. 
Sazona las pechugas con sal y pimienta al gusto. Colocalas en un refractario o recipiente para horno y cubrelas con la salsa de cilantro. Corta el tomate en rodajas y ponlas sobre cada una de las pechugas. Finalmente espolvorealas con el queso mozarella rayado y mételas al horno al rededor de 30-40 mins. 
Puedes decorar con unas ramitas de cilantro o perejil. Y a Disfrutar!!

As promised, today I’m posting  the recipe for Cilantro Chicken Bake.
First of all you’re gonna need: 4 chicken breasts. 1/2 handful of cilantro, 1 cup of milk, 1 tbsp chicken bouillon powder, 1 tbsp of butter, 1 tbsp of flour, 1 tomato, shredded mozarella cheese, olive oil, salt and pepper.

Preheat oven to 180 degrees C.
To make cilantro sauce add cilantro, milk, chicken broth powder and a pinch of salt to the blender until you get a homogeneous sauce. Melt the butter in a skillet over medium heat. Once melted add the flour, stirring with whisk until you have a light golden color. Pour the cilantro sauce, stirring until it boils, take it off the fire and stir constantly until you have a thick consistency.
Season the chicken breasts with salt and pepper. Place them in a glass baking dish, top with cilantro sauce. Cut the tomatoes into slices and place them on top of each of the breasts. Finally sprinkle them with mozzarella cheese and place them in the oven for about 30-40 mins.
You can decorate with a few sprigs of cilantro or parsley. Enjoy!!

Easy Chicken n' pasta

Hola everyone!
I know i promised to keep you posted on my valentine’s dinner.. but it turned out i didn’t make one.. my in-laws came visit so we didn’t have much time…we had a early Vday celebration by going to watch 50 shades of Grey. (and we didn’t like it).
Anyhow.. today i made some pasta that probably I would’ve made for that day… please try it.. it came out delicious, and it was really easy to make.. it took like 50 mins.
Here’s what you need:
8 oz of the pasta of your choice (i made flat noodles) 
1 tbspn of cornstarch
2 cups of chicken broth
2 tbspn of olive oil
2 garlic gloves, minced
4 boneless chicken breasts, skinned and cubed
1 onion, sliced.
½ green pepper, seeded and thinly sliced
½ red pepper, seeded and thinly sliced
14 oz of tomatoes, chopped
1 tspn of dried oregano
1 tspn of dried basil
¼ cup of white wine (optional)
½ cup of fresh parmesan cheese
Nothing too fancy or hard to get… right? But lets go to the directions:
1. Boil enough water with salt in a saucepan. Add pasta and cook 8-10 mins or until al dente. Drain the pasta and reserve.
2.Mix the cornstarch with the chicken broth in a bowl until smooth and reserve.
3.In a frying pan, heat the olive oil over medium heat. Add garlic and chicken. Cook, stiring constantly, until the chicken is done. (About 10 mins). 
4.Add the onions and peppers and cook until they’re tender (aprox. 5 mins). Add the tomatos and simmer for 10 mins. Pour the chicken broth and the wine (if you decided to use it) to the pan and season with oregano and basil. Add the cooked pasta and cook over medium heat for about 5 mins. 
5. Serve and top with parmesan cheese. You can decorate with some basil leaves.
As this has chicken already this was my main course for today’s meal. You could slice some bread, pour it with olive oil and garlic powder and toast in the oven to go with your pasta. 
Also, if your feeling more romantic, throw some white wine in the eccuation and you’ve got yourself a romantic dinner ;)

Sugar? Yes, please!


Hello there! I’m glad to find you reading me again. So today’s post is about what you’ve probably been earing for the past couple of weeks. BINGO! Valentine’s Day!

First let me fill you in about my experience with this romantic holiday. I’ve never had the chance to celebrate it, at least not with any kind of date, just with my friends when I (and them) was single. Then, when I had a boyfriend he was miles and miles away from me that day. And last year, that I was happily and formally engaged to my now beloved and handsome husband, we was also miles and miles away because we were in this long distance relationship. 

To sum up… I have a non-existence experience with Valentine’s day. 

Sencondly, Yi (that’s my pet name for my hubby) doesn’t like V-day. He’s one of those people who thinks everything is invented so all the big companies make some money on us…he’s right. And that if you love a person you should say it anytime of the year not just on Feb 14th. Again right. But seriously, even with all that, it doesn’t hurt anyone or i haven’t heard of anyone becoming poor for expending a little bit on his/her loved one. 

So the question is.. should we or shouldn’t we celebrate it this year as a husband and wife?

I thought of making this romatic dinner for him, since I got the cooking bug and everywhere else is gonna be crowded as hell right? I went on Pinterest to find the perfect menu, I revised dozens of websites looking for ideas.. and all of them sounded pretty good, but after giving it so much thought I was sure of one thing. I wasn’t gonna experiment on a date that I would want it to be so Perfecto. 

Instead I thought i’d make some simple thing like something I’ve done before and I know I master. Then I won’t make a mess out of my kitchen that latter I would have to clean and all before setting the table for the two of us. And I’m pretty sure that by the end of the night I would be so tired that the instant my head touches the bed I’m gonna be all sleepy and yawny. 

I’m not sure yet what the menu will be, but I’ll keep you posted on it. So go ahead and make something special for your sweetie, and yes, make an extra effort, but don’t loose sight of what’s important this day: LOVE LOVE LOVE!! I rather be nice and fresh than all tired.
